Adapted from family circle recipe

Recipe Ingredients for Meatballs

1 lb beef 90% lean
1/2 cup ricotta part-skim by sargento
3 T parsley, fresh
2 T bread crumbs
2 T milk, skim
56 g better'n eggs
2 cup marinara, jarred

Recipe Directions for Meatballs

  1. Combine all ingredients except olive oil in large bowl.

  2. Mix gently to combine.

  3. Shape into 12 meatballs

  4. Heat a large lidded nonstick skillet over medium heat.

  5. Brown meatballs ~2 minutes per side.

  6. Reduce heat to medium and add marinara.

  7. Cover and gently simmer on medium-low for 13 minutes or until cooked through. Spoon sauce over meatballs halfway through.
