Great meatballs -- a little fatty, but so worth it.

Recipe Ingredients for Meatballs

1/2 cup milk
1 cup breadcrumbs
3 eggs
1 lb ground beef
1 lb ground pork
1 lb ground veal
3 cloves garlic
1 1/2 tsp salt
1/4 cup parsley
1/4 cup basil
1/4 cup olive oil

Recipe Directions for Meatballs

  1. Mix milk and breadcrumbs

  2. Add meat, eggs (lightly beaten), garlic, salt, parsely and basil

  3. Mix ingredients well within your hands

  4. Heat 1/2 cup olive oil in a heavy skillet until hot (but not smoking) (1/4 cup will be left when you're done)

  5. Form mixture into 2" meatballs and set on a platter

  6. Place the meatballs (a few at a time) in the hot oil and begin rolling them occasionally to quickly brown the entire outside (about 2-3 minutes total)

  7. Place the meatballs on a paper-towel lined platter

  8. Finish meatballs by simmering in pasta sauce for 30 minutes, or by baking at 325 for 20 minutes.
