Relatively low-fat, high protein addition to any meal or pasta sauce.

Recipe Ingredients for Meatballs

644 g lean ground beef
1 large egg
1/2 cup bread crumbs

Recipe Directions for Meatballs

  1. Mix ground beef with one egg and the bread crumbs in a large bowl. Add any spices for additional flavoring - this doesn't add a lot of calories, but sure adds taste. Sometimes I use sun-dried tomatoes or basil.

  2. Roll each meatball into small 2-3" balls - there should be approximately 20 meatballs. They should be large to start, since they will shrink in size after being cooked.

  3. Heat a large skillet to high heat (80%) and sear the meatballs. Turn frequently to sear in the juices.

  4. Once the meatballs are seared on the outside, turn the heat down to low and cover with a lid.

  5. Cook the meatballs on low heat for approximately 10-15 minutes, or until thoroughly cooked. Every five minutes, shake the pan to evenly cook meatballs.

  6. Turn off heat and let sit for about 2 minutes. Soak up the extra grease of the meatballs by letting them sit on a paper-towel lined plate.

  7. Allow meatballs to cool. Store 4 meatballs in a plastic bag - this is one serving.

  8. Freeze or store in the refrigerator.
