Soft meatballs with onions in a flavorful sour cream sauce.

Recipe Ingredients for Meatballs with onions in sour cream

1 pound lean ground beef
4 slices bread, crusts trimmed off
3/4 cup milk
1 tbs chopped fresh parsley
1 tsp salt
1 pepper to taste
3 medium onions, sliced
3 tbs olive oil
3/4 cup sour cream

Recipe Directions for Meatballs with onions in sour cream

  1. Soak bread in milk (OK to use low-fat), then break up with a fork and add to ground beef with parsley, salt and pepper.

  2. Saute onions in olive oil over medium heat with lid on, so they become soft and transparent but do not brown.

  3. Form meat mixture into golf-ball size balls and add to onions in pan (should make about 30 small balls). Cook 10 minutes on one side and 5 minutes on the other on medium heat (they should be soft, not crisp and brown).

  4. Add sour cream (OK to use fat-free) and mix gently with meat balls and onions. Sprinkle with paprika and serve.
