Meatballs over garlic bread with pepper and onion beef sauce.

Recipe Ingredients for Meatballs and Green Pepper Heroes

1 tbs butter
1 clove garlic, minced
2 french rolls (long, cut in half lengthwise)
1 lb lean ground beef
1/2 cup soft bread crumbs
2 tbs ketchup
1 tsp salt
1/2 tsp pepper
3 tbs flour
1 large onion, sliced
1 1/2 cup bell pepper, sliced
1 1/2 cup beef broth
2 tbs cornstarch (dissolved in water)

Recipe Directions for Meatballs and Green Pepper Heroes

  1. Preheat the oven to broil.

  2. Combine beef, bread crumbs, ketchup, salt and pepper in a bowl. Form into balls, roll into the flour.

  3. Over med-hi heat, brown the meatballs in a skillet sprayed with oil. Remove and set aside when cooked through.

  4. While the meatballs are cooking, slice the onion and bell pepper. Add to the skillet when the meatballs have been removed. Cook until tender.

  5. Add the meatballs to the vegetables along with the beef broth. Bring to a boil, then turn down to simmer and cover for 15 min.

  6. Dissolve the cornstarch in water and add to the skillet to thicken the sauce.

  7. Mince the garlic. Spread butter over french rolls and top with the garlic. Place into the oven to toast the bread.

  8. Serve the meatballs and vegetable mixture over the garlic bread. Add salt and pepper to taste.
