Serve on brown rice or whole grain noodles. Use lower fat content hamburger and cook so fat drains away as baking. Really good!!

Recipe Ingredients for Meatballs Baked in Mushroom Sauce

1 1/2 lbs hamburger, 20% fat
3/4 cup nonfat dry milk
1 1/2 cups soft bread crumbs
1/4 cup chopped onion
1 egg, slightly beaten
1 tsp salt
1/4 tsp pepper
1/2 cup water
1/4 cup butter
1/2 lb sliced mushrooms
1/4 cup chopped onions
1/4 cup flour
1/2 cup nonfat dry milk
2 cups beef broth, reduced sodium
1/4 cup light sour cream
1/2 tsp salt
1 pinch of paprika

Recipe Directions for Meatballs Baked in Mushroom Sauce

  1. Meatballs--

  2. Combine all ingred. for meatballs. Shape into 16. Place in baking dish. Bake at 350 for 30 minutes. Pour mushroom sauce over meatballs and bake 20 minutes longer.

  3. Mushroom Sauce--

  4. Melt butter in pan. Add mushrooms and onion. Cook gently for 5 minutes. Remove mushrooms and onion from butter. Remove pan from heat. Add flour and nonfat dry milk. Mix well. Gradually stir in liquid. Cook until smooth and thickened, stirring constantly. Stir in sour cream, add seasonings, mushroom and onion. Pour over meatballs.

  5. Yields 6 servings
