Recipe Ingredients for Meatball Stew

2 lbs ground beef, lean
2 tablespoons onion, minced
1 garlic clove, minced
1/2 cup bread crumbs
1 teaspoon worcestershire sauce, low sodium
1/2 teaspoon hot sauce
1/2 cup egg substitute
1/2 teaspoon pepper
2 tablespoons olive oil, extra virgin
4 cups potatoes, chopped
1 cup carrots, chopped
1 cup green peppers, chopped
1 cup red peppers, chopped
1 cup celery, chopped
1 cup onion, chopped
10 oz cream of mushroom soup, low-fat
20 oz tomato soup
1/2 cup salsa
1 cup water

Recipe Directions for Meatball Stew

Mix egg with dried onion, bread crumbs, egg substitute, garlic Worcestershire sauce, and pepper. Blend meat in and mix thoroughly. Heat oil over medium-jigh heat in a large skillet. Form meatballs into 1 1/2 inch balls; brown on all sides in hot oil. Place potatoes, carrots, peppers and celery incrockpot. Place browned meatballs on vegetables. Quickly brown onions and add to crockpot. Spoon salsa over the top. Add water, hot sauce and soups. Cook on low for 8 hours.
