Vietnamese Meatball Soup. I like to add steamed Brown rice to the bowl.

Recipe Ingredients for Meatball Soup

1 lb ground beef
2 tablespoons fish sauce
1 teaspoon sesame oil
1 teaspoon corn starch
1 teaspoon salt
1/4 teaspoon black pepper
4 cups chicken broth or water
1 tablespoon fish sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
1/4 teaspoon black pepper
2 tablespoons green onion, thinly sliced
2 tablespoons cilantro, coarsely chopped

Recipe Directions for Meatball Soup

  1. To make the meatballs, combine the ground beef with all its seasonings (ingredients listed before the chicken broth) and mix to blend well.

  2. Shape into meatballs, using about 1 tablespoon of mixture for each one.

  3. You should have 25-30 meatballs.

  4. To make the Soup, bring the Broth to a rolling boil over high heat.

  5. Drop in half the meatballs, and cook, stirring now and then, until cooked thru, 3 to 5 minutes.

  6. Transfer to a bowl with a slotted spoon, cook the remaining meatballs in the broth and transfer to the bowl as well.

  7. Season the Broth in the pot by stirring in the fish sauce, soy sauce, sesame oil and pepper.

  8. Return the meatballs to the broth and heat through.

  9. Sprinkle with green onion and cilantro and serve hot.
