Meatball Soup Base Recipe

This is my base for Italian Meatball soup. This is a hearty and tasty soup. I left out the calories for the meatballs, since I'm making that a separate recipe. It is loaded on the site though!

Recipe Ingredients for meatball soup Base

42 oz Tomato Products
22.5 oz Tomato Soup
12 Glass Water
5 medium Russet Potato
2 small Onions
4 clove Garlic
16 oz Cut Green Beans
3 medium Russet Potato
0.75 cup leaves, whole Basil, Fresh

Recipe Directions for meatball soup Base

  1. Dice up the garlic and onions. Place in a deep soup pan. Add a few tablespoons of water. (If desired you can use olive oil instead)

  2. Cook until transparent. Then add 6 cups water.

  3. Start adding the paste and the tomato soup. (I usually use tomato sauce instead, but did not have any this time, so I substituted the soup).

  4. Finish adding the rest of the water.

  5. Then dice the potatoes. Add these to the pot. Bring to a simmer.

  6. Add the basil, take away or add it depending on taste.

  7. If you decide not to make the meatballs, add some other spices such as rosemary and parsley. You would probably want to add some more potatoes as well as some more beans to make it heartier without the meatballs.

  8. If you are adding the meatballs, then add those once they are browned.

  9. Last add the beans after the soup has simmered for about an hour with the potatoes and meatballs in it. Let it simmer another 5 minutes. Then shut off the heat. Serve hot or reheat the next day.

  10. Enjoy!
