This recipe is from Betty Crocker's Working Woman's Cookbook, p133. The recipe is supposed to yield 30 appetizer meatballs; we made about 25 so one serving is 1 meatball from a 25 meatball yield.

Recipe Ingredients for Meatball Appetizers (Working Woman's Cookbook)

2 portion ( yield from 1/2 lb raw meat ) Beef, Ground, 85% Lean Meat / 15% Fat, Crumbles
1 medium (2-1/2" dia) Onions
0.33 cup Bread Crumbs, Dry, Grated, Plain
1/4 cup Milk, Nonfat, Fluid
1 extra large Egg, Whole
1 tsp Salt, Table
0.13 tsp Pepper, Black
1/2 cup (8 fl oz) Water
106.67 grams Currant Jelly
16 tbsp Chili Sauce
1 tsp Spices Mustard Powder

Recipe Directions for Meatball Appetizers (Working Woman's Cookbook)

  1. Mix ground beef, chopped onion, crumbs, milk, egg, salt and pepper. Shape mixture into thirty 1-inch balls. Place in ungreased 13x9x2-inch baking pan. Cook uncovered in 400F oven until done, about 15 minutes. (To serve immediately, continue as directed in TO SERVE except - decrease simmering time to 15 minutes.) Place meatballs on ungreased cookie sheet; freeze uncovered until firm, about 20 minutes. (This partial freezing prevents meatballs from freezing together solidly.) Place partially frozen meatballs in heavy plastic bag or freezer container. Seal, label and freeze no longer than 3 months.

  2. TO SERVE: About 25 minutes before serving, mix chili sauce, water, jelly and mustard in 2-quart saucepan. Add meatballs. Heat to boiling, stirring occasionally; reduce heat. Cover and simmer until meatballs are hot, about 20 minutes. Serve in chafing dish with wooden or plastic picks.
