I used left over meat balls and added zucchini and spinach to fill manicotti pasta. You can add 1/2 container of low-fat ricotta cheese.

Recipe Ingredients for Meat, Zucchini, and Spinach Manicotti

15 oz ricotta cheese
2 cups spinach
1 zucchini
32 oz spaghetti sauce
4 oz manicotti
1 oz parmesan cheese

Recipe Directions for Meat, Zucchini, and Spinach Manicotti

  1. Preheat oven to 350.

  2. Cook pasta for 7 minutes and immeidately remove from water. Drain and rinse with cool water to stop cooking.

  3. Mash meat.

  4. Grate zuchinni and thaw spinach.

  5. Add zucchini and thawed spinach to meat and mix well.

  6. Fill manicotti with meat mixture.

  7. Arrange in a 8x8 baking dish or pan lightly greased with olive oil.

  8. Mix diced tomatoes and tomato sauce and add any wanted spices. I suggest salt, oregano, parsley, and basil.

  9. Pour tomato sauce over manicotti.

  10. Bake for 25-30 minutes adding cheese on top in last ten minutes.
