Meatloaf with added veggies and low sodium.

Recipe Ingredients for Meat and Veggie Loaf

1 lb beef, ground, 95% lean
2 medium carrots, grated
1 medium squash, summer, grated
1 medium onion, diced fine
2 cloves garlic, minced
1/2 cup plain breadcrumbs
8 oz tomato sauce, no salt added
1 egg white
1/2 tsp black pepper
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp cayenne pepper
2 tbs ketchup

Recipe Directions for Meat and Veggie Loaf

  1. Mix all ingredients except ketcup and form loaf

  2. Bake in 400 degree preheated oven for 30 minutes

  3. Spread ketchup on top of loaf and bake for another 10 to 15 minutes, until done.
