Meat and Mixed Vegetables with Rice and Eggs Baked

Recipe Ingredients for Meat and Vegetable Pie

10 serving Eggs
1 serving Rice Pilaf
6 serving Bologna Chicken Pork Beef
1 medium raw Onion Red
2 serving Garlic Cloves
3.5 cup Vegetables, Mixed
4 serving Easy Mash'd Creamy Butter Mashed Potatoes
2 tbsp Vegetable Oil
1/4 tsp Chili Powder
2 dash Pepper, Black
0.5 serving 2% Reduced Fat Milk
5 tbsp Grated Italian Pecorino Romano Sharp Cheese

Recipe Directions for Meat and Vegetable Pie

  1. brown 1 red onion in 3 tbs cooking oil.

  2. Dice Bologna into small cubes add to Onions.

  3. Cook low heat until meat is slightly browned.

  4. Add Packaged Rice Pilaf and 1 Can of Mixed Vegetables with liquid.

  5. Stir in Garlic, Chili Powder and Pepper and cook till rice is tender.

  6. Remove from heat and let Cool.

  7. Beat 10 AA eggs and 1/2 cup 2% milk in 3 qt mixing bowl until thoroughly mixed.

  8. Add cooled meat and vegetables to Egg mix, stir until mixed well.

  9. Add 1 package Hungry Jack Easy Mashed Potatoes, stir until well distributed.

  10. Place contents into Large Baking Dish or Pan, Sprinkle Ground Cheese on top.

  11. Place in preheated oven at 350F and bake 30 minutes.

  12. Check for complete cooking through contents, microwave as needed to solidify.

  13. Serve hot or cooled, serves apx 8.
