A delightfully tasty meatloaf which incorporates the use of Quaker Oats in place of bread crumbs, together with the addition of grated zucchini to add moisture. I used Whole Foods 84% lean ground beef. This recipe yields 6 servings of 234.4g = approx. 8.25 oz (1 cup) ounces each, (after cooking)..

Recipe Ingredients for Meat Loaf (Sharon Tooley's Recipe modified)

2 eggs
3/4 cup skim milk
1/8 cup Quaker Oats
1/8 cup Breadcrumbs (seasoned)
1/2 grated zucchini (medium)
1/2 cup chopped onion
1 Roma tomato (chopped)
2 tablespoons parsley, snipped
1/2 teaspoon sage
1 1/2 pounds ground beef (16% fat/grass fed from Whole Foods)
1/4 cup catsup
2 tablespoons brown sugar
1 teaspoon dry mustard

Recipe Directions for Meat Loaf (Sharon Tooley's Recipe modified)

  1. Preheat oven to 350 degrees

  2. Combine the eggs and the milk

  3. Stir in the Quaker Oats, the breadcrumbs, the zucchini, tomato, onion, parsley, sage, 1/2 to whole tsp. pepper and 1 tsp. salt

  4. Add the ground beef and mix well

  5. Pat into a 8x4x2 inch loaf pan

  6. Bake for 1 hr. at 350 degrees

  7. Combine catsup, sugar and mustard and spread over the meat

  8. Return to oven for 15 more minutes

  9. Remove from oven and let rest for 5 minutes
