Meat loaf made with venison. Has a layer of spinach baked inside.

Recipe Ingredients for Meat Loaf Roll

2 lbs ground venison
10 oz spinach
2 eggs
3/4 c bread crumbs
1/4 c skim milk
1/2 tsp salt
1/4 tsp pepper
1/4 tsp oregano leaves
3 slices mozzarella cheese

Recipe Directions for Meat Loaf Roll

Steam spinach. Mix venison, eggs, bread crumbs, milk, salt, pepper and oregeno. Pat mixture into rectangle on aluminum foil, 10x15. Arrange spinach on rectangle. Roll up rectangle into roll. Bake in shallow pan. 1 1/4 hours @ 350 degrees. Lay cheese on top of roll, bake 1 minute.
