(adapted from Food & Wine, February 1989)

Recipe Ingredients for Meat Loaf

1 tbsp salted butter
1 large onion, finely diced
1 medium green bell pepper , finely diced
64 g celery , finely diced (1 large stalk)
1 tsp thyme
2 lbs beef extra lean ground
1/2 cup bread crumbs
1/3 cup ketchup, divided
2 large eggs, beaten
1 tsp salt
1 1/2 tsp pepper or to taste
2 tbsp ketchup
23 g bacon (1.5 slices)

Recipe Directions for Meat Loaf

  1. In a large skillet, melt the butter over medium heat. Add onion, pepper, celery and thyme. Reduce heat to low and cook, covered, stirring once or twice, until vegetables are very soft (about 20 minutes). Cool mixture to room temperature before adding to meat.

  2. Preheat oven to 350 F.

  3. In a large mixing bowl, combine cooked vegetables and beef. Add bread crumbs, 1/3 cup of ketchup, eggs, salt and pepper. Mix well.

  4. Place mixture into a large casserole and form into a flat 2? high loaf. Spread remaining 1/3 cup ketchup over loaf. Top with bacon slices. Wipe sides of casserole.

  5. Bake 1 hour or until cooked through with no pinkness to the meat (145F). Let stand 10 minutes before slicing and serving.

  6. Freezes well. Great for sandwiches, too.
