Recipe Ingredients for Meat Loaf Cupcakes

2 lbs extra lean ground beef
1 1/2 c onion, diced
1 1/2 c carrots, shredded
1 1/2 c bell pepper, diced
2 tbsp garlic, minced
1/2 c egg substitute
1/8 c wheat bran
1/2 c tomato sauce, no salt
2 tbsp worcestershire sauce

Recipe Directions for Meat Loaf Cupcakes

  1. Combine all ingredients but tomato sauce in bowl with hands until just mixed.

  2. Divide mix into 18 non-greased cupcake pan wells, mounding slightly

  3. Brush tomato sauce over top of each

  4. Bake for 22 minutes in preheated 350% oven

  5. salt and pepper to taste

  6. Note: good cold, and leftovers slice horizontally into 4 pieces which fit perfectly in a sandwich
