Meat Lasagna Recipe

Delicious meat lasagna from the back of a Red Cross Lasagna box. (No idea how old it is, but we've been using this recipe for years.)

Recipe Ingredients for Meat Lasagna

1 lb lasagna noodles
3/4 lb ricotta
2 eggs
1 lb mozzarella cheese, grated
4 tbsp grated Parmesan cheese
1 1/2 tsp salt
1/2 tsp pepper
3/4 lb ground beef
1/2 lb pork sausage
1/4 cup vegetable oil
1 onion, medium
1/4 cup parsley, chopped
1 clove garlic
1 carrot, grated
28 oz tomatoes, pureed
6 oz tomato paste
1/2 cup red wine (optional)
12 oz water
1 tsp salt
1/4 tsp pepper
1 tsp basil

Recipe Directions for Meat Lasagna

  1. Directions for meat sauce:

  2. Sauté onion, parsley, garlic and carrot in oil.

  3. Add meat and brown.

  4. Add tomatoes, paste, wine and water, salt, pepper, and basil.

  5. Simmer 1 hour.

  6. Boil lasagna 10 to 12 minutes in 6 qts. salted water. Add cold water until lasagna can be handled. Do not drain.

  7. Mix eggs and ricotta cheese. Season to taste with salt and pepper.

  8. Grease baking dish(es) and arrange the bottom with parallel layers of lasagna.

  9. Cover with meat sauce, ricotta mixture and mozzarella. Sprinkle with grated Parmesan.

  10. Cover with another layer of lasagna, sauce and cheese.

  11. Repeat until all the ingredients are used. (Use another baking dish if necessary.)

  12. Bake in 350 degree oven about 30 minutes.
