Recipe Ingredients for meat lasagna

2 lbs. sweet italian sausage - casings removed
4 cloves garlic - minced
15 oz. tomato sauce
46 oz. crushed tomatoes
2 tablespoons tomato paste
1 teaspoon olive oil
2 teaspoons kosher salt
1 teaspoon black pepper
3 tablespoons oregano
1 tablespoon crushed red pepper
1 tablespoon fennel seeds
1 teaspoon sugar
32 oz. part skim mozzarella cheese - grated
48 oz. part skim ricotta cheese
8 oz. parmesan cheese (have your cheese monger grate it for you)
16 oz. lasagna

Recipe Directions for meat lasagna

  1. In a large pot over medium heat, brown sausage in olive oil. when sausage is cooked, pour off any excess grease and return to the heat. Stir in garlic, salt and pepper, and tomato paste.

  2. add tomato sauce and rushed tomatoes. Stir in oregano, red pepper, fennel seeds, and sugar. Reduce heat to low, cover, and simmer for at least one hour.

  3. Boil pasta in another large pot. While pasta is cooking, grate mozzarella cheese. When pasta is finished cooking, drain and rinse in cold water to stop the cooking process.

  4. Spread a thin layer of sauce in the bottom of a large casserole dish to keep the lasagna from sticking. Begin layering with a layer of pasta, followed by a layer of sauce, a layer of ricotta, and a layer of mozzarella. Continue layering until dish is full, and top with a layer of parmesan.

  5. Bake uncovered in a 350 degree oven until cheese is melted and top is golden brown, about 40 minutes. Let lasagna rest at least 10 minutes before cutting.
