slightly healthier version using 93% ground beef, whole wheat noodles and part-skim cheeses

Recipe Ingredients for Meat Lasagna

1 lb ground beef, 93% lean
16 oz part skim ricotta
16 oz part skim mozzarella
72 oz pasta sauce, Rinaldi
16 oz lasagna noodles, whole wheat, dry
2 tbs parmesian cheese
2 eggs, whole

Recipe Directions for Meat Lasagna

  1. Boil noodles til al dente, drain

  2. Brown ground beef, drain

  3. Add eggs, garlic powder, salt and pepper to ricotta in a bowl

  4. Shred mozzarella cheese, put aside

  5. Assemble lasagna by first spraying olive oil spray into large casserole pan.

  6. Place layer of noodles in pan, add spoonfuls of ricotta mixture and spread onto noodles.

  7. Sprinkler half the ground beef over cheese layer then sprinkle 1/4 of the mozz cheese onto the layer.

  8. Pour enough pasta sauce over the layer to cover entire layer.

  9. Repeat.

  10. On final layer, place noodles on top, cover with sauce, the rest of the mozz cheese and the parmesian.

  11. Bake at 375 degrees for 45 minutes.
