A meat free lasagne that will satisfy any meat eater

Recipe Ingredients for Meat free Lasagne

1 onion, diced
1 green pepper, diced
60 g mushrooms, diced
60 g carrot, grated
300 g Quorn pieces
800 g tinned tomatoes, chopped
2 stock cubes
450 ml 1% milk
3 tbsp flour
65 g parmesan
100 g reduced fat cheddar
160 g pasta

Recipe Directions for Meat free Lasagne

  1. Soften onion and pepper in low cal spray for 5 mins.

  2. Add mushroom and carrot and cook for a further 5 mins.

  3. Add Quorn mince and cook until browned.

  4. Crumble in stock cubes and add tinned tomatoes.

  5. Bring to boil, then simmer for 10 mins.

  6. In a seperate pan, put the milk and flour on a medium heat and bring to boil stirring continously to remove all lumps.

  7. Add half the parmesan and cheddar and simmer for 3 mins or until the cheese has melted and the sauce thickened.

  8. Layer the quorn mixture, lasagne sheets and cheese sauce in an ovenproof dish, ending with a layer of cheese sauce.

  9. Sprinkle over the remaining cheese and bake in a pre-heated oven at 180c for 30-40mins. Until the pasta is soft and the top browned and bubbling.

  10. Remove from overn and allow to stand for 5 mins before serving.

  11. Serve with green veg or salad of your choice
