Makes 40 servings



Cook tortellini according to package directions. Rinse tortellini in cold water to stop the cooking process. Put the tortellini into a large bowl; toss with the Italian dressing mix. Place in the fridge for an hour. In the meantime, you can chop all of your other ingredients and prepare the dressing. Mix the olive oil, vinegar, oregano and parsley together in a small container. Once the tortellini has chilled, mix in the other ingredients; toss everything with the dressing just before you serve the salad. I like to make the salad a day ahead and keep the dressing in one of those cruets that comes with Good Seasons salad dressing mixes, and dress the salad when it's time to eat.

Recipe Ingredients for Meagan's Tortellini Salad

2 pound tortellini (I like to get 2 packages - one rainbow-colored and one regular three-cheese)
4 ounces pepperoni slices, chopped
2 ounces Asiago cheese, shredded
2 orange, or yellow bell pepper, diced
3 green onions, chopped fine
7/10 oz dry Italian-style salad dressing mix
3/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
2 tablespoons dried oregano
1 tablespoon dried parsley
