This is my mother's recipe for mini vegan pumpkin chocolate chip muffins! They're amazing, but high in sugar and calories. Feel free to cut the recipe in half! Don't just enjoy them during Thanksgiving either!

Recipe Ingredients for MC's Mini Vegan Pumpkin Chocolate Chip Muffins

1 cup organic sugar
1/4 cup vegetable oil
4 1/2 teaspoons + Ener-G Foods Egg Replacer
15 oz organic pumpkin (one can)
2 1/4 cups Flour
1 1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 1/4 teaspoon cinnamon
1 1/4 teaspoon ginger
1/4 teaspoon cloves (you may use less)
1/4 teaspoon salt
1 dash nutmeg
8 oz Chocolate Chips

Recipe Directions for MC's Mini Vegan Pumpkin Chocolate Chip Muffins

  1. Preheat oven to 375 degrees Fahrenheit. In a large bowl, combine sugar, oil, egg replacer (equal to three eggs), and pumpkin; mix well.

  2. In a separate bowl, sift together flour, baking powder, baking soda, cinnamon, ginger, cloves, salt, and nutmeg. Add to pumpkin mixture and mix well. Stir in the chocolate chips. If not using cupcake liners, grease pan and fill 2/3 full with batter. You can use regular sized muffins, too (makes about 24). Bake for 25 to 30 minutes for large muffins and 15 to 20 minutes for the mini muffins. Test with a toothpick.
