Recipe Ingredients for MC's Coconut lentil soup

1 tblsp olive oil
1 onion (2 large leeks, white only), minced
4 cloves garlic
1 1/2 tsp red pepper flakes
1 cup red lentils
4 cups unsalted chicken stock
400 ml coconut milk
4 tblsp lime juice (1 lime)
1 scallion, thinly sliced
1/4 cup celery leaves

Recipe Directions for MC's Coconut lentil soup

  1. Saute onion (leeks) & garlic in oil over medium heat till soft (2-3 minutes)

  2. Stir in pepper flakes and lentils, mix well

  3. Add stock and coconut milk, simmer ~15 minutes, till lentils tender

  4. Add salt & pepper to taste, garnish with scallion & celery leaves
