From _The McDougall Program for Maximum Weight Loss_. Left out the green beans and corn. To be served alongside whole grains or potatoes.

Recipe Ingredients for McDougall Lo-Cal Stew

1/3 cup water
1 medium onion
1 clove garlic
1 bell pepper
28 oz tomato
4 small zucchini
2 small yellow squash
1 tbsp soy sauce
1 tbsp parsley flakes
1 tsp dried basil
1 tsp dried oregano
1 tbso cornstarch
1/4 cup water, cold

Recipe Directions for McDougall Lo-Cal Stew

  1. Place the water in a large saucepan with the onion, garlic and green pepper.

  2. Cook and stir until slightly softened, 3 or 4 minutes.

  3. Add the tomato, zucchini, and squash. Cover and simmer over medium heat for 15 minutes.

  4. Add the seasonings and cook for another 5 minutes.

  5. Mix the cornstarch with the 1/4 cup of cold water and add to the soup, stirring until thickened.
