If you love asparagus, you will love this soup. It also has spinach to intensify the green color.

Recipe Ingredients for May's Delicious Asparagus Soup

2 tbs. olive oil
2 big onions
1 lb of asparagus
4 cups of vegetarian broth
1 cup spinach
1 pepper
1 salt

Recipe Directions for May's Delicious Asparagus Soup

  1. 1. Chop onions and saute in olive oil in a soup pot until golden.

  2. 2. Add broth and bring to a boil.

  3. 3. Cut pretty tips off the asparagus and set them aside. Cut off the most woody ends, but you can leave more woodiness than usual because it softens. Cut asparagus stems into 1/2 inch sections.

  4. 4. Add stem sections to the pot and simmer until soft, about 40 minutes.

  5. 5. Add spinach and simmer for 5-7 minutes longer.

  6. 6. Puree the soup.

  7. 7. Add the asparagus tips to the puree and simmer until they are soft, 5-10 minutes.

  8. Add pepper (and salt) to taste.
