Recipe Ingredients for Mayonnaise Home Made

3 eggs
2 teaspoons salt
1 1/2 teaspoon dry mustard
3 tablespoons white vinegar
3 tablespoons lemon juice
28 ounces vegetable oil

Recipe Directions for Mayonnaise Home Made

  1. Place eggs, salt, mustard, vinegar, lemon juice and 3/4 cup oil in a blender.

  2. Cover and blend on high speed about 10 seconds, until well blended.

  3. With the blender running on high, open the top and start adding the remainder of the oil in a very slow but steady stream until all the oil is used, or until the mayonnaise reaches the consistency you desire. It will thicken when refrigerated.

  4. Makes about 1 quart.
