Recipe Ingredients for Mayoless Potato Salad

6 medium red potatoes
1 large red onion, diced
1/4 cup extra-virgin olive oil
1/4 cup white vinegar
1 tablespoon parsley
1 tablespoon oregano
1 tablespoon thyme
3 minced garlic cloves
1 salt
1 pepper

Recipe Directions for Mayoless Potato Salad

  1. Clean and dice potatoes. Cover with salted water and boil until fork tender. Drain.

  2. Dice onion. Combine with potatoes.

  3. Combine vinegar, parsley, oregano, thyme, garlic, salt, and pepper. Drizzle in olive oil while whisking.

  4. Pour dressing over potatoes and toss gently to combine. Serve warm or chilled.
