Recipe Ingredients for Max's Savory Spinach & Rice Casserole

3 cups wild rice
1 cup gruyere cheese - shredded
1/4 cup gruyere cheese - shredded
2 cups mushrooms - sliced
24 ounces spinach - frozen
2 roma tomatoes - thinly sliced

Recipe Directions for Max's Savory Spinach & Rice Casserole

  1. Cook the rice as per directions.

  2. In a large bowl combine rice, cheese mushrooms and spinach. Coat a 13x9x2 inch baking dish with cooking spray. Pour rice mixture into baking dish, top with tomato slices.

  3. Cover with foil and bake at 400 degrees for 15 minutes; remove foil and bake an additional 15 minutes.
