Recipe Ingredients for Max's Russian Cabbage Soup

1 pound beef brisket
2 tablespoons vegetable oil
1 medium onion
2 clove garlic cloves
4 cups beef broth
4 cups low-sodium chicken broth
2 tsp,+crumbled bay leaves
2 carrots
5 oz savoy cabbage
1/2 cup sauerkraut
2 tablespoons fresh dill

Recipe Directions for Max's Russian Cabbage Soup

  1. Pat the beef dry with paper towels and season with salt and pepper. Heat 2 teaspoons of the oil in a large Dutch oven over medium-high heat until just smoking.

  2. Add half of the meat and cook, stirring occasionally, until well browned, 5 to 7 minutes, reducing the heat if the pot begins to scorch. Transfer the browned beef to a medium bowl. Repeat with 2 teaspoons more oil and the remaining beef, transfer to the bowl.

  3. Add the remaining 2 teaspoons oil to the pot and place over medium heat until shimmering. Add the onion and cook until softened, 5 to 7 minutes. Stir in the garlic and cook until fragrant, about 30 seconds.

  4. Stir in the beef broth and chicken broth, scraping up any browned bits. Stir in the bay leaves and browned meat with any accumulated juice. Bring to a boil, then cover, reduce to a gentle simmer, and cook for 30 minutes.

  5. Stir in the carrots, cabbage and sauerkraut, cover partially (leaving about 1 inch of the pot open) and simmer gently until the beef and vegetables are tender, 30 to 40 minutes longer.

  6. Off the heat, remove the bay leaves. Stir in the dill, season with salt and pepper to taste, and serve with the sour cream.
