Recipe Ingredients for matzo brie (fried matzo)

7 slices matzo
5 eggs
3 tbsp. olive oil
1/2 tsp. kosher salt

Recipe Directions for matzo brie (fried matzo)

  1. break matzo into small pieces and soak for 1 or two minutes in a small amount of water (you may omit the soaking for a crispier recipe)

  2. break and stir eggs in another bowl

  3. add salt to eggs

  4. pour over bowl of matzo and blend thoroughly

  5. heat up saucepan and oil

  6. pour matzo egg mixture into saucepan

  7. stir fry over medium heat until fairly crisp

  8. serve
