stuffed rolled flank steak great as cold cuts or appetizers.

Recipe Ingredients for matambre

1500 g flank steak
5 eggs
2 carrots
1/2 red pepper
4 tbsp parsley

Recipe Directions for matambre

  1. Butterfly a flank steak, trim to a square shape.

  2. Boil 5 eggs to semi hard point.

  3. Chop parsley and 3 cloves of garlic

  4. On the non-fatty side of the steak brushed the chopped parley and garlic.

  5. Chop carrots and pepper into very tinny cubes and spread them over the steak.

  6. Start rolling, eggs first, using them as round molding for the matambre.

  7. (You can add canned peas or celery to these roll also)

  8. When you obtain a tied roll, saw and tie where necessary with cooking or natural thread.

  9. Boil for two hours.

  10. Press for excess water to exit the roll and cool for at least 3 hours.

  11. Untie the matambre and cut into thing slices.
