Recipe Ingredients for Massaman Curry

1 cup, chopped or diced Chicken, Breast, Meat Only
3 oz Cooking Sauce
1 tsp Cinnamon Stick
1 serving Whole Star Anise
6 tbsp chopped Shallots
2 cup Coconut Milk
1 cup (8 fl oz) Water
1.5 tbsp Fish Sauce
2 large (3" to 4-1/4" dia.) Potatoes, Boiled
1 oz Tamarind Concentrate
1 tsp unpacked Sugars, Brown
1 serving Peanut Oil
0.3 cup Peanuts, All Types, Dry-roasted
1.2 cup leaves, whole Basil, Fresh

Recipe Directions for Massaman Curry

  1. Cut the 1 lb chicken breast into bite sized pieces.

  2. Add 1 tbsp of the peanut/vegetable oil and 3 tbsp massaman curry paste to the chicken. Mix well, and set aside to marinate.

  3. Heat remaining 1 tbsp oil in a pan.

  4. Once the oil is hot, fry the 2 sticks cinnamon, 8 crushed cardamom, and 3 star anise in it for 30 seconds.

  5. Add the 6 small/3 large shallots and fry until golden-brown.

  6. Then add the chicken, lower the flame and let it cook for 3-5 minutes.

  7. Add 2 cans coconut milk, 1.5 tbsp fish sauce, 1 cup water, 2 chopped-into-large-pieces potatoes, 3-4 tbsp roasted unsalted peanuts and half the basil.

  8. Bring the mixture to a boil.

  9. Cover and simmer for 30 minutes or until the potatoes are cooked through.

  10. If needed, remove the lid and cook until the curry reaches desired thickness.

  11. Check seasoning.

  12. Remove the pan from the flame.

  13. Stir in the 1/2 tbsp tamarind paste, 1 tbsp brown sugar and remaining basil.

  14. Serve hot with jasmine rice.
