This is the original, NOT intended to be a low-cal recipe. I savd it so I could have record it for my own data. Substitute where needed or eat small portion for lower calories.

Recipe Ingredients for Massaman Curry

2 tbsp shallots, sliced
3 tbsp garlic
2 tsp jalapeno pepper, minced
2 tbsp ginger root, minced
1 tbsp lemongrass, minced
1 tsp lime zest
1 tbsp. ground coriander
1 tbsp. ground cumin
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. ground cloves
1 tsp. ground cardamom
1 tbsp. fish sauce
1 lb. boneless chicken, chopped into pieces
1/2 cup cashews, roasted and unsalted
1 cup potato, cubed
2 carrots, sliced
14 oz. coconut milk
1 tbsp cilantro, chopped
2 tbsp lime juice

Recipe Directions for Massaman Curry

  1. Blend first 13 ingredients into a paste. (note...you should use red chillies instead of jalapenos, but the CC database wouldn't recognize them, so I just made it jalapenos to save the recipe. Also use keffir lime leaves instead of lime zest...same issue)

  2. Heat safflower oil in a skillet and add paste. Stir for 30 seconds until fragrant. Add chicken and vegetables and simmer until potatoes and carrots are tender.

  3. In separate pan, dry saute cashews until they show some browning. Add to the curry and top with lime juice, cilantro.

  4. Serve with jasmine rice.
