Recipe Ingredients for Massaman Curry

1 tablespoon olive oil
1 onion, chopped
4 cloves garlic, minced
2 tsps ginger, chopped
1 pound chicken breasts, sliced into 1/2 inch strips
4 red potatos, cubed
2 carrots, large, sliced
14 1/2 ounces, chicken broth
14 ounces lite coconut milk
1 tablespoon curry powder
1/8 tsp cayenne pepper
1 cup frozen peas

Recipe Directions for Massaman Curry

  1. Saute chopped onion, minced garlic and chopped ginger in olive oil until vegetables soften, 3 minutes.

  2. Add potatoes and carrots and cook for another 3 minutes stirring occasionally.

  3. Add chicken and cook until meat is no longer pink, about 7 minutes.

  4. Add can of broth. Bring mixture to boil then reduce heat to low and simmer for 20 minutes until potatoes and carrots are cooked.

  5. Add coconut milk, spices, peas and stir until mixture begins to boil.

  6. Serve over fragrant basmati rice.

  7. If you desire a thicker curry, you can add 1 TBS cornstarch to 2 TBS water. Put this mixture in at the end and stir until curry reaches desired thickness.
