Recipe Ingredients for Massaged Kale Salad

4 cups kale
2 tablespoons lemon juice
2 tablespoons olive oil
1/2 teaspoon salt
2 teaspoons honey
1/2 teaspoon black pepper
1 cup mango
1/4 cup dried cranberries
2 tablespoons toasted walnuts

Recipe Directions for Massaged Kale Salad

  1. 1. In a large serving bowl, add the kale, half of the lemon juice, a drizzle of oil and salt. Massage until kale starts to soften and wilt, 2 to 3 minutes. Set aside while you make the dressing.

  2. 2.In a small bowl, whisk remaining lemon juice with the honey and ground black pepper. Stream in the remaining oil while whisking until an emulsion forms. Pour the dressing over the kale, and add the mango, cranberries, and toasted walnuts. Toss and serve.
