Recipe Ingredients for Mashed Sweet Potatoes with Roasted Grapes

3 1/2 cups sweet potatoes
2 tbsp honey
2 oz goat cheese
2 cups red seedless grapes
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tbsp canola oil

Recipe Directions for Mashed Sweet Potatoes with Roasted Grapes

  1. Bake sweet potatoes at 350 for 45-60 minutes, until tender.

  2. Remove flesh from skin and mix with goat cheese, honey, cinnamon and nutmeg.

  3. Turn oven to 450.

  4. Coat grapes on oil, salt and pepper to taste.

  5. Bake for 20-25 minutes until grapes just begin to split.

  6. To serve: crumble a little goat cheese over mashed sweet potatoes, drizzle with honey and top with roasted grapes.
