Great way to add flavor to traditional mashed potatoes while cutting down on starch, carbs and calories!

Recipe Ingredients for Mashed Roots and Cauliflower

1 turnip
2 medium potatoes
1/3 head cauliflower
2 tbsp. fat free sour cream
2 tbsp. fat free evaporated milk
1 salt and pepper to taste

Recipe Directions for Mashed Roots and Cauliflower

  1. Peel and cube the turnip and potatoes.

  2. Boil lightly salted water, add the cubes, turn to simmer, and cook until tender.

  3. Steam the cauliflower in a basket above simmering roots or microwave until tender.

  4. Drain the potatoes, turnips and cauliflower.

  5. Mash the turnips and potatoes together.

  6. Put the cauliflower through a ricer so it isn't lumpy. A regular potato masher won't break it down into small enough pieces.

  7. Mix together in a serving bowl with the sour cream and milk. Salt and pepper to taste.

  8. Serve warm. I like this with mushroom gravy!
