Mashed purple potatoes with cauliflower. This is a nice fun way to make your dinner plate more colorful.

Recipe Ingredients for Mashed Purple Cauli-Potatoes

3/4 serving Purple Potatoes (6 small)
1 1/2 cup (1" pieces) Cauliflower
3 tbsp Omega-3 with Extra Virgin Olive Oil Light Buttery Spread
2 tsps Garlic Powder
1/4 serving Light Soymilk, Nature's Place Organic, Plain
1/8 tsp Pepper, Black
1 serving size Laughing Cow Light Swiss Original

Recipe Directions for Mashed Purple Cauli-Potatoes

  1. Wash and bake 6 small purple potatoes. (I poked mine and zapped them in the microwave for about 6 minutes.)

  2. Steam 1 1/2 cups cauliflower.

  3. Reserve the steaming liquid.

  4. Slice potatoes into a bowl (You should have about 1 cup of slices.). Add cauliflower.

  5. Add in margarine and 1/4 cup soy milk (or milk of your choice).

  6. Mash or whip with beater.

  7. Add garlic powder and cheese and whip again.

  8. If too thick, add some of the reserved cauliflower liquid.

  9. Season to taste with black pepper.

  10. NOTE: I don't cook with salt, but you can add salt if you need it.

  11. NOTE 2: I enjoyed this just fine, but Hubby asked that next time I change ratio of potatoes to cauliflower. So maybe 1 1/2 cups of potatoes and 1 cup cauliflower.

  12. I got about 4.5 servings (about 1/2 cup each)
