Recipe Ingredients for Mashed Potatoes- Veggie Patties

1 tablespoon olive oil
1 small onion, diced
1 clove garlic, minced
1/2 cup carrot
1/4 cup broccoli
1/4 cup zucchini
2 cups mashed potatoes
1 cup brown rice (cooked)
1 teaspoon onion powder
1 teaspoon pepper
1 teaspoon dried parsley

Recipe Directions for Mashed Potatoes- Veggie Patties

  1. Sauté onion and garlic in olive oil until tender. Chop cooked vegetables into small pieces. Stir together all ingredients.Advertisement:

  2. Form into patties and place on an oiled baking sheet. Bake at 350° for 15 to 20 minutes or until lightly browned on bottom. Turn over and bake for an additional 5 to 10 minutes or until other side is browned. (Baking time will vary depending on the size of the patties.)

  3. Additionally, you can take the vegetables (carrots, zucchini, and broccoli) and add your preferred amounts to create your own taste. For example 1/2 cup of carrots and 1/2 cup of broccoli and remove the zucchini.
