All the texture and comfort of mashed potatoes, but with fewer calories and more flavor. The celery root kicks the taste up a notch, although the taste is still quite delicate on the palette.

Recipe Ingredients for Mashed potatoes lite

2 large baking potatoes - peeled and cut into pieces
2 cups celery root - peeled and cut into pieces
1/2 cup 2% milk
2 tablespoons butter
1/2 teaspoon kosher salt
1/2 teaspoon pepper

Recipe Directions for Mashed potatoes lite

  1. Boil potatoes and celery root until pieces are tender.

  2. Drain water.

  3. Add butter, milk, salt and pepper to pot and mash ingredients together.
