Less carbs than regular mashed potatoes with the same taste. For picky or nonadventurous eaters make sure you mash the cauliflower well to help 'hide' it..

Recipe Ingredients for Mashed Potatoes with Cauliflower

1 cup (1" pieces) Cauliflower
0.67 cup Potatoes, Mashed, Dehydrated, Flakes
0.13 serving Light Soymilk, Nature's Place Organic, Plain
0.13 tsp Sodium-Free Salt
1 tbsp Shedd's Spread Country Crock Light Soft

Recipe Directions for Mashed Potatoes with Cauliflower

  1. Cook 1 cup of cauliflower in 1 cup boiling water until soft enough to mash.

  2. Remove cauliflower and mash with fork or whir in blender just until of mashed potato consistency.

  3. Stir in 2/3 cups instant potato flakes, 1/4 cup hot water (from cooking cauliflower), 1 TBSP margarine, 2-3 TBSP Light Soy Milk and a dash of NoSalt potassium salt substitute.

  4. Adjust liquid to get consistency you prefer.

  5. Optional: Add a dash of pepper, garlic powder, cayenne, or other seasonings.

  6. Note: You can also use 1% or 2% milk if you prefer. Nutrition analysis accounts for use of light soy milk.

  7. Serving size is about 3/4 cup.

  8. Each serving has about 256 mg potassium.
