Almost like latkes, but uses mashed potatoes instead of grated potatoes.

Recipe Ingredients for Mashed Potato Pancakes

4 potatoes
2 tbsp ranch dressing
2 tsp salt
1/2 tsp ground black pepper
1/4 cup parmesan cheese
1 tbsp butter
1 tbsp olive oil
1 egg, beaten

Recipe Directions for Mashed Potato Pancakes

  1. Put potatoes into a saucepan. Add 1/2 teaspoon salt. Add water until potatoes are covered. Bring to boil, reduce heat and simmer, covered, 15-20 minutes, or until done - a fork can easily be poked through them.

  2. Reserve some of the cooking water. Drain water from potatoes. Put hot potatoes into a bowl. Add 1/2 cup reserved cooking water, ranch dressing, salt and pepper. Use potato masher to mash potatoes until well mashed. Use a strong spoon to beat further, adding more milk to achieve the consistency you desire. (Do not over-beat or your potatoes will get gluey.)

  3. Cool potatoes. Heat butter and oil in saute pan over med heat. Form cooled potatoes into cakes. Coat with Parmesan cheese. Put pancakes in to pan and cook about 3 minutes on each side, until browned and crisp. Drain on paper towels.
