Recipe Ingredients for mashed pink un-potatoes

1 1/2 cups cauliflower
1/2 cup beets
1 tbsp smart balance
2 tbsp shallots
2 tbsp half and half
1 1/2 cups fat free chicken broth
1/2 tsp soy sauce

Recipe Directions for mashed pink un-potatoes

  1. cut the cauliflower and beets into 1/2 inch pieces

  2. boil slightly soft

  3. dice shallots very finely and saute in frying pan in the earth balance until almost brown

  4. add the chicken broth and half and half to the frying pan

  5. Mash the vegetables in a large bowl with a pastry cutter until it resembles mashed potatoes, the beets will make it pink

  6. add the sauce from the frying pan to the mash and mix thoroughly

  7. mix in the soy sauce and eat
