Recipe Ingredients for Mashed Eggplant and Tomato Salad

1 1/2 lbs eggplant
2 tbsp fresh lemon juice
14 oz diced tomatoes
5 cloves garlic, coarsely chopped
1 pinch of salt
4 tbsp extra virgin olive oil
1/2 tsp paprika
1 pinch of cayenne
1 tsp ground cumin
2 tbsp parsley, chopped
2 tbsp cilantro, chopped
1/2 cup kalamata olives, pitted

Recipe Directions for Mashed Eggplant and Tomato Salad

  1. Cut the eggplant in half and lay (skin side up) on a sheet of oil-sprayed aluminum foil on a baking sheet. Prick with a fork. Roast in a 475 degree oven for 45 to 55 minutes. When cool enough to handle, peel and drop them in a bowl of water with a little lemon juice to keep their flesh pale.

  2. Drain the eggplants in a strainer and press out as much water as possible. Still in the colander, chop the flesh with a pointed knife, then mash with a wooden spoon, letting the juices escape through the holes.

  3. Cook the tomatoes with the garlic and a little salt over low heat for about 10 minutes, or reduced to a thick sauce, stirring occasionally. Mix in a bowl with the mashed eggplants and the rest of the ingredients. Adjust seasonings to taste.

  4. To serve, spread flat on a plate and garnish with olives.
