Recipe Ingredients for Mashed Caulipots

1 head,+medium+5-6"+dia cauliflower
1 3/4 cups vegetable broth
3 cloves garlic
1 cup basil leaves
1 pinch salt
1 pinch pepper
1 tsp olive oil

Recipe Directions for Mashed Caulipots

  1. Chop cauliflower roughly into florets

  2. Heat oil in pot and saute garlic until darkened

  3. Add cauliflower and vegetable broth

  4. Boil for 10 mins

  5. Add salt and pepper

  6. Add chopped up basil leaves

  7. Remove from heat and transfer to food processor

  8. Puree until smooth or 'mashed'

  9. Serve garnished with extra basil leaves if desired
