VERY, VERY GOOD TASTING side dish! I like cauliflower anyway, & this is a great variation of what we usually have! I'd like to go on, now, & perhaps make a mashed potato/cauliflower combo, half & half! Anyway, your simple recipe is great & definitely a keeper! Thanks for sharing it!

Recipe Ingredients for Mashed Cauliflower

1 head cauliflower
2 tablespoons Margarine Non Hydrogenated Low in Saturated Fat
1/2 teaspoon salt
3/4 cup nonfat milk

Recipe Directions for Mashed Cauliflower

1 Cut Cauliflower into small pieces and add to boiling water in a large sauce pan. Add Salt to water and cook Until Soft and mushy. Drain water and pit cauliflower back into saucepan add butter and milk (heat milk in microwave for 30 seconds). Mash all ingredients together. Use a mixer if you have one.
