A wonderful substitute for mashed potatoes.

Recipe Ingredients for Mashed Cauliflower

1 head cauliflower
1 tbsp olive oil
1 small onion, chopped
1 clove garlic
8 oz. fat-free chicken broth
1 pepper

Recipe Directions for Mashed Cauliflower

  1. Break up cauliflower and steam until tender.

  2. While cauliflower is steaming, cook chopped onion on medium heat until tender, stirring frequently. Add garlic and cook for about 1 minute.

  3. In a blender, add onion and garlic mixture, add cauliflower and 4 oz. chicken broth and blend. It should have the texture of mashed potatoes, but if needed, add more chicken broth until it gets to this texture.
