Recipe Ingredients for Mashed Cauliflower

6 cups cauliflower
1 tbls extra virgin olive oil
1 tbls mascarpone cheese
1 tbls parmesan cheese, grated
1 dash of salt
1/2 tsp black pepper
2 garlic cloves

Recipe Directions for Mashed Cauliflower

bring a large pot of water to a boil. add cauliflower and garlic cloves and boil till just tender. drain reserving a few tbls of the cooking liquid. Add the cauliflower and garlic to a food processor with the olive oil and pulse adding water till you get the desiered consistency. Put in a sering bowl and stir in cheese and any desired herbs. Season with salt and pepper to taste.
