Better than mashed potates - and healthier

Recipe Ingredients for Mashed Cauliflower

2 cups cauliflower, cut into florets
1/4 cup water
2 tbsp water
1 tbsp cornstarch
1/3 cup half and half
1 tsp Splenda
3/4 tsp salt
1 dash white pepper
1/8 tsp garlic powder
1/8 tsp onion powder

Recipe Directions for Mashed Cauliflower

  1. Place cauliflower florets into microwave-safe dish with 2 tbsp water. Cover tightly and cook on high until tender, stirring once after about 6 minutes.

  2. Place cooked cauliflower in large bowl and mash (or use food processor or blender.) Transfer the puree to a medium saucepan.

  3. Dissolve cornstarch in 1/4 cup water and add to cauliflower. Add half and half and remaining ingredients, stir.

  4. Set saucepan over medium heat and cook, stirring often, for 5 - 10 minutes or until thick. Season to taste and serve hot.
